Food production

We follow the national and university student nutrition recommendations, which define, among other things, the amount of salt and the quality of fats. We want to contribute to the sale of vegetarian and vegan food by offering completely plant-based lunch options and drinks every day. We only use Finnish poultry and pork, and our fish are always MSC certified.

In our product line, we strive for a seasonal mindset, which means that we offer, among other things, fresh seasonal vegetables. We also strive to favor local producers and use them regularly according to availability. We concentrate our other purchases as much as possible on large wholesalers, minimizing logistics emissions on our part. We calculate our purchases carefully so that our inventory turnover is as efficient as possible.

We prepare as much as possible ourselves from clean and fresh raw materials, minimizing processed ready-made foods and unethical products. We bake lunch rolls, baguettes and other breads, as well as café display products, in our own bakery. This employs people and reduces emissions caused by logistics, among other things, we do not use additives and promote the serving of fresh and unprocessed products.

We have achieved the Organic restaurant certification (TasteLuomu, luomuravintola.fi) and are currently on the one-star ladder.

All the coffee we serve is Fair Trade and our selection always includes 5-10 other Fair Trade products. In addition, the work coats we use comply with the Fair Trade label.
